Title: The Next Best Thing to Dinner With Mart.....
Post by: ghopper1924 on July 06, 2013, 07:37:07 PM
....is receiving a box of fresh veggies from her!!

If you'll remember, I won the contest regarding the age of a certain table a few weeks ago. The prize was dinner with Mart. Weeeelllll.....sinc e she's in Texas, and we're in Missouri, the logistics were a bit much. She did, however, promise some veggies as a consolation, and imagine our delight when a box appeared on the ghopper doorstep.

She was as good as her word (really, would you expect anything else?) and MsGhopper is jumping up and down with glee. She used to have a big garden of her own, and recognizes quality goods.

So, tomorrow we'll hoist a fork in Mart's honor.

THANKS MART!!!!!!!!!!!!

Did they arrive in edible condition ??  That's all I could think of that didn`t need refrigeration !!  Then thinking about the USPS,,,, well you know how they are !! And since Ghopper isn`t a tomato person,, he got new potatoes !!  Hope they are OK !!  Mailing veggies is stressful !!  I could imagine them arriving as tomato juice !!

The closest recipe to what I make is this one.  I, of course, add a couple cloves of garlic!! We make with bacon, ham, leftover meat, or not meat at all!!!

Fresh Corn Salad (par boiled corn removed from the cob, tossed with chopped red onion, cilantro, celery, tomato, poblano pepper, S & P!

Stuffed Tomatoes

Believe it or not, Tomato Basil Sorbet!!!  This is closest to what we have had

I probably have a version of all those except the sorbet !!  I need things I can make and can !! I have already made all the obvious, picante sauce (twice) regular stewed, spaghetti/marinara sauce/ketchup,, next I guess will be BBQ sauce !!
Going to try the pie with corn !!  That's my kind of cooking !!

I do the green tomato relish or caddo relish last,, !!  Decided against the tomato preserves since it tasted same as ketchup and had the same seasonings in it,, so I threw more tomatoes in,,added a few peppers and turned it into spicy ketchup !!  Had it last night over salmon croquets and my cream style corn,, sliced tomatoes on the side !!

Pickled Red Tomatoes?
http://www.seriouseats.com/2011/08/how-to-make-pickled-red-tomatoes-canning-summer.html (http://www.seriouseats.com/2011/08/how-to-make-pickled-red-tomatoes-canning-summer.html)

I grew up eating Hot Pickled Chow Chow (green tomato relish).

Roasted Corn Salsa!  (I make this and eat it immediately but not reason it can't be made and put up!)
http://mrswages.com/page/Food_in_Jars_Roasted_Corn_Salsa.aspx?nt=619 (http://mrswages.com/page/Food_in_Jars_Roasted_Corn_Salsa.aspx?nt=619)

One more thing we used to make and can.  We always loved to eat Sloppy Joes.  So we would go ahead and make the sauce and put it up in jars.  Then later in year simply brown the meat and pour it on!

In my area a Tomato Pie is what they used to call a pizza and a Sloppy Joe is a Kosher sandwich made with three layers of rye bread, corned beef, turkey and pastrami with Russian dressing and coleslaw, usually ordered as a party platter.

The bar is Vics in Bradley Beach NJ and has looked like that since the 1950s. They make an incredibly thin and tasty pizza. In the summer on weekends you can wait an hour for a table. The sandwiches are from a Kosher deli in Linden NJ which I have never been to. Do you know what a chocolate egg cream is? Or a black and white soda? How about a hard roll?

 Corn Chowda
1 stick real butter
1 Large onion chopped
Salt
Pepper
8  potatoes  peeled & cubed
2 cans  (or home made) Creamed Corn
1 empty cream corn can filled with half & half
Melt butter in Large pot add & Saute' onions
add potatoes and water just to cover
Boil 15 min. or until tender (keep water just covering not to much)
add creamed corn, half & half -  heat
Shake water & flour together to make a thick paste stir in a little at a time until thickened.
Add salt - 1  palm of hand  (this will take the salt as the potatoes & flour will soak it up) & pepper to taste.
Enjoy :)

Chocolate egg cream  New York city soda fountains during the 1920s   1/4 cup chocolate syrup,  1/2 cup cold milk,  2/3 cup cold carbonated water
Pour chocolate syrup into chilled large glass. Gently stir in milk. Holding the carbonated water about 5 inches from the top of the glass, slowly pour into the glass until a thick foam comes to the top of the glass.
Using a long swizzle stick, stir the mixture once quickly,  Serve immediately.

black and white soda same as above only scoop vanilla ice cream instead of milk.

Frogpatch heard of all of them.  But, Wendy177, there's no egg in egg cream?  I always assumed it was like old fashioned ice cream that had egg in it.  What is the Black n White then?  Pink?

Wullie, I had heard of Scottish Mince Pie (different from the mincemeat pie we eat here in the US)...but not on a bun!

Thanks for the chowda' recipe.

Wonder what egg-head thought of putting egg in a title of a food that contains no egg!  LOLOL  :)

That Black & White sounds kind of like an Italian soda.

I like the one my son drinks.  Although I usually am not a big Dr. Pepper fan (don't shoot me, I know Dr. Pepper is BIG in Texas and Louisiana).  You take 1/8 cup cream, 1/8 cup vanilla syrup, crushed ice and a Dr. Pepper. It is actually tasty.

Hey Mart, I am sure you have served Fried Skillet Corn being in the south.  Bacon drippings in your cast iron skillet, fresh corn off the cobb, pepper and if you are like us...a little jalapeno!  YUUUUMMMMMM!!!!

Just pokin' fun.  Amazing what we remember about each other after long times on this site!  :)

This is a simple southern recipe. Add anything else you want to with it.  You can add diced red pepper, minced garlic.

If you want to make it "Mexican Style" you simply saute some chopped onion and chopped green chilies.  Toss in the corn and cook a little longer.  Remove it from the heat and add a chunk of cream cheese and let it melt in and add salt and pepper to taste.

My southern (slightly South of Seattle) version of the S'rn fried corn dish is :

Prepare tempura batter with a pinch of salt & pepper & several generous pinches of dry wasabi & chill .
Remove the husks from fresh corn-on-the-cob , wash well , cut into 1/3 rds & let 'em get up to room temp .
Dip corn into batter & gently set (on end) into hot oil & cook for about 3 min.

Serve with soy or tamari sauce .

Well that's one I wouldn`t have thought about !! Sounds good though !!  Do you make your tempura batter with flour, cornstarch or both ??
Title: Re: The Next Best Thing to Dinner With Mart.....
Post by: fancypants on July 11, 2013, 08:42:12 PM
I use both rice & all-purpose (or cake flour) flour together , mart .
No cornstarch in my tempura !

I'll sometimes stick bamboo skewers firmly into the end (core) of the little suckers , if tasked with a big crowd ... makes the in & outta the oil handy .

i was brought up on them and borscht...my father made them often...thinking back..it seemed like every week,...he usually made around 75/100 at a time....after he,d boiled them,he,d fry onions and speck....to make pork crispies...then we,d have them with the onions and pork crispies poured over...and he also used to make his own brawn...he,d buy a pigs head....and boil it in a gigantic cast iron pot,..then after he,d strained it, he,d pick off the meat and pour the gloop into ashets..and add the meat..then when it was set, he,d slice it and sprinkle malt vinegar over it....We have a German supermarket appox 200 yds from the house, and they sell ready made pierogies....in fact i,ve got some in our feezer....that i think i,ll have later today.....
